👨🍳 Method
- 1Cook the rice in a pot of water according to packet directions, about 15 minutes, then drain and set aside.
- 2Cut the paneer into 2cm cubes and cut the yellow and green capsicum into chunks.
- 3Heat 1 tsp olive oil in a large pan over medium-high heat and add the paneer cubes.
- 4Cook the paneer for 4 minutes, turning occasionally, until golden brown on most sides, then remove from the pan and set aside.
- 5Add the remaining 1 tsp olive oil to the same pan and cook the crushed garlic for 30 seconds until fragrant.
- 6Add the capsicum chunks and broccoli florets to the pan with the smoked paprika, stirring to coat.
- 7Cook for 6 minutes, stirring occasionally, until the broccoli is bright green and just tender and the capsicum has softened slightly.
- 8Return the paneer to the pan and toss everything together for 1 minute to warm through.
- 9Spoon the rice into a bowl, top with the paneer and vegetable mix, scatter the mixed sprouts on top and finish with a squeeze of lemon juice.
