👨‍🍳 Method
  1. 1Preheat the oven to 200°C.
  2. 2Spread the frozen potato cubes on a baking tray, drizzle with 1 tsp olive oil, and roast for 20 minutes until golden, turning halfway.
  3. 3Meanwhile, finely chop the onion and garlic, and grate the carrot.
  4. 4Heat the remaining olive oil in a large frying pan over medium-high heat. Add the onion and garlic and cook for 2 minutes until softened.
  5. 5Add the beef mince and cook for 6-7 minutes, breaking it up with a spoon, until no pink remains.
  6. 6Stir in the grated carrot, tomato paste, oregano and cinnamon and cook for 2 minutes until fragrant.
  7. 7Add the frozen spinach and 60ml water, cover and simmer for 5 minutes until the spinach is fully thawed and wilted, stirring occasionally.
  8. 8Stir the kalamata olives through the mince, then add a pinch of salt and black pepper, taste, and add more if needed.
  9. 9Spoon the roasted potato cubes onto a plate and top with the beef mince mixture to serve.
